My first introduction to a springform pan came at a party when I was in my teens. My sister-in-law baked a cheesecake in this type of pan, something that I had never seen before. I was fascinated at how easily the sides of the pan came away to reveal a perfectly formed cheesecake. So of course, I had to get one when I married the hubby and started cooking.
Unfortunately, the 9-inch springform pan has sat in my pantry gathering dust. It works well, it's a great product and it does what it's supposed to do.
I'm just too lazy to crack out eight eggs and whip up a cheesecake. It's far too easy to tell the hubby, "Let's go to Cheesecake Factory!"
Recently, my daughter discovered the strange-looking pan with the latch on the side and asked me what it was for. I explained how the latch tightened the 2.75-inch pan walls against the bottom of the pan to keep the contents in during baking. And how easily the pan could be unlatched and the sides removed.
"What a cool pan! Can I try some brownies in it?"
The next thing I knew, the pan became a regular brownie pan. We've discovered the ease of taking a long knife and being able to cut the brownies into nice pieces once the sides are removed. The non-stick surface of the pan works well for everything that's baked in it. I even made a quiche with a pie crust and it turned out well.
The pan can be cleaned easily by hand. It is not recommended for the dishwasher due to the non-stick finish.
