Growing up, we had a Cuisinart DLC-8S 11 Cup Pro Custom Food Processor in the kitchen for over two decades, and I recently purchased my own from Macys. I do a lot of cooking that requires slicing, pureeing, blending large amounts of liquid ingredients, and chopping nuts, so I was looking for an easy, quick solution. Enter the Pro Custom. It contains specialized stainless steel blades for shredding, slicing (2mm), chopping/mixing, a spatula, and even a training video on how to use it. Unlike newer push-pad models, there are only two simple buttons: On, and Pulse/Off. Care must be taken not to overprocess foods, especially those with a high water content (onions, etc.), as it is easy to accidentally liquefy them. The razor-sharp blades ensure a consistent result every time, whether youre julienning veggies or making homemade nut butter.
The instruction and recipe booklet is thoughtfully designed and full of step-by-step color photos demonstrating how to use the proper techniques for bread, vegetables, meat, cheese, nuts, and more, along with a thorough troubleshooting guide for each section. There are included recipes for soups (lentil, chili, split pea), side dishes (mashed potatoes, creamy cole slaw), and desserts (pastry, brownies, apple pie). Several reviewers have mentioned breaking their Cuisinart making thick bread doughs. The included warning states never to mix dough that is too stiff to mix by hand, and common sense would lead me to opt for a Kitchen Aid Professional stand mixer if youre primarily looking for something to handle very thick dough. I only gave the Cuisinart four stars due to the large number of plastic parts that are expensive to replace when they eventually break. The Cuisinart DLC-8S handles chopping, dicing, and slicing with panache, and the 10-year motor warranty ensures that your Cuisinart food processor will be a loyal fixture in your kitchen for many years to come.
