Pros: Nothing sticks to this mat, it cools off really quickly, delivers perfect cookies.
Cons: It is semi-expensive, and it increases cooking time.
After owning my Silpat for almost a year all I can say is "Wow!". When I saw it used on a cooking show I was a little skeptical, because it seemed to me a little strange. However, I now use my Silpat in more ways than I could of imagined.
First of all, I obviously use it to bake cookies. It produces perfect, chewy cookies every time, and I have never had a burnt one. On top of this use I roll out pie crusts, pour caramel on it to cool; I even found myself spreading ice cream on it while making an ice cream cake. It seems like every time I use a new recipe, I find another use for it.
I have to mention the easy of cleaning. For cookies and pie crusts I just wipe it quickly with a wet cloth, For caramel I quickly brush off any remaining drips (yes, I said "Brush off" !) before I bring on the cloth. This product has saved me so much time scrubbing pans, that it has paid for it's self.
So there is my testimonial. I've been converted from a skeptic, who thought it was a silly extravagance, to someone who can't live without my Silpat.
