Pros: Compact shape, nice lid, extra surface area on the sieve, easy to use.
Cons: Not really a must-have, you can use other kitchen equipment to make yo-cheese.
The Bottom Line: If you haven't tried yo-cheese (laban) you are missing a treat. The Donvier Yogurt Cheese Maker is convenient to use and will encourage you to make it often.

The Donvier Yogurt Cheese Maker is a simple device. It's a square plastic box with a sieve insert made of metal mesh, and a lid. You put plain yogurt into the sieve, cover it, and let the yogurt drain out the whey in the fridge. The whey, the liquid part of yogurt, drips out of the mesh and into the outer square container while the curds stay behind in the mesh sieve. A few hours later you are left with a cream-cheese like product that tastes like sour cream or French "creme fraiche" but is lower fat, especially if you start with low fat or non-fat yogurt.
The resulting cheese is called "laban" in the Middle East and is used like cream cheese or sour cream. It can be used to enrich sauces, to make desserts like coeur a la creme by mixing in powdered sugar and lashings of strawberry or raspberry sauce over top. It is nice on thick, grainy bread as a spread (with chives or onion soup mix!) and it makes wonderful dips--try dry ranch dressing mixed in. And of course it is excellent on baked potatoes.
The Donvier maker is constructed of a good, fairly sturdy plastic and a very fine metal mesh for the sieve that lets you unmold the yo-cheese easily. The mesh is in a "wave" form, with a hump in the middle. This may seem odd, but the wave gives more surface area to allow the whey to drain away. While not essential to a kitchen, because you can use cheesecloth and a colander, or a simple kitchen sieve over a bowl, this is a nice box to use and fits efficiently into the fridge with its compact size. If you like creamy dishes but watch the fat, then yo-cheese is very useful as well as very delicious on its own. Recommended.
