Ebisu, regardless of the wait, is one of the best sushi houses I have ever been to. The fish is of the highest quality and freshness and, in my opinion, the service is good. The waitress are always smiling and the sushi chefs behind the counter are a fun to visit with.
Most people are deterred by the wait. I however have an answer to this. The weekends, during the day, are the best time to go to Ebisu. I know better than to venture out on a week night. I tried in the past and waited an hour for 2 people. But please don't let that stop you.
They have the best yellow tail in the bay. Their rainbow roll is fabulous. And the June 29 roll is very different and tasty (wrapped in soy bean paper).
One visit on a Friday night (with a long wait made better with a beer from a local pub) proved to be a fun adventure. Sushi chefs joined in with the dining patrons to drink down several sake bombs (sake shot in a glass of Saporo). I can't remember a dining experience as lively and exciting as that night.
Take the time to plan ahead. Get there on the weekend days or be prepared for a wait (put your name down and head to the Shamrock around the corner on Lincoln). It's worth it.
