THE HORROR
My favorite knife was missing. I was NOT happy! I spied my other half sitting on the couch acting innocent and immediately knew he was the culprit. He of course denied, denied, denied. But my woman's intuition told me a different story...especially when he showed up at home a couple of days later with two brand new knives for me. He "just happened" to pick them up for me because they were on sale. Yeah, right.
After his denial, I caught him outside looking around for "something" but he wouldn't say what. Gee, wonder what that could be. So I made a big show of struggling in the kitchen while preparing dinner and commenting on how the knife I was using was not the knife I liked to use for the particular job I was doing.
He was careful to stay away from me while I had a knife in my hand.
THE NEW KNIVES
Well, I seem to have done a good job of making him feel guilty because as mentioned above, he showed up two days later with new knives for me. These knives were from the Farberware Millenium Series. He did not get me the whole set...just the carving knife and the chef's knife.
I was of course skeptical that these new additions would ever live up to the missing knife.
APPEARANCE, FEEL
The appearance and feel of these knives made me even more suspicious. Surely these "new fangled", steely and modern looking, lightweight knives had no chance of living up to the standards of their old, sturdy, wooden handled, heavy predecessor. I wrinkled my nose in disapproval and the other half rolled his eyes and scurried away.
I wasn't about to let on yet that upon picking them up, I actually did like the way they fit my hand better than my old knife though. There's an indentation on the handle that my pointer finger rested into perfectly. And then after that there's a "hill" that then gently slopes providing the perfect place for my next three fingers. And my pinky rests comfortably against the notch on the end of the handle which keeps your hand from sliding off the knife even if your hands are wet or covered with food.
I also liked the grey rubber accents located on the flat side of the handle which provided a comfortable, non-slip grip for my thumb. Well, actually, the "flat" side of the handle isn't really flat. These knives are kind of futuristic looking with an all over curve to the handle.
BUT DO THEY CUT IT?
Absolutely, yes! They're VERY sharp. And I was pleased with their performance.
Even when I buy boneless, skinless, chicken breasts that should be able to just be cooked as is, I still find little pieces of fat and stuff that I want to cut off and a very sharp knife is needed for that. Same thing with trying to get the strips of white fatty type stuff off a pork tenderloin. It's a lean meat but when I get it home from the store it's never quite trimmed as well as I'd like it to be. Again, this task is much easier with a sharp knife. With a dull knife, it's a real chore. The Farberware carving knife worked perfectly for me.
The Chef's Knife, however, I'm not as thrilled about. Maybe it's just a matter of getting used to it. But I'm not used to it yet after a couple of months. The light weight of the carving knife wasn't a problem. But the light weight of the chef's knife is a problem for me. I just can't seem to get the right rhythm with it when attempting to chop things up as I did with my old knife. It's just fine for slicing raw meat and chicken, however. And the carving knife is fine for slicing both raw and cooked meat and poultry.
By the way, I have no idea what type of knife my old knife was...but it did just about everything...chopping, slicing, and cutting.
I'm generally happy with the knives and have been getting a lot of use out of them. They're easy to clean and look as new as the day they came out of the package.
