Ok, I haven't acutally made anything in Frozen Assets Lite & Easy, yet but....the recipes look tasty, not the cream of whatever soup casserole type at all. Unlike other another freezer cookbook I have, these recipes have a variety of spices and other tasty ingredients and many non-casserole presentations. The recipes seam family friendly without being too bland. Not haute cusine but not beany weanies! The format of the book also solves the other major problems I had when I tried freezer cooking before.
The book is broken down into "Mini Sessions" where 4-8 recipes of the same type are grouped together along with their shopping lists. I really like this because you don't have to devote a whole day to freezer cooking if you don't want to and you can make things according to what's on sale. It also makes it much easier to remove a recipe you don't like from the plan or add your own without having to dissect an entire month's worth of ingredients and prep instructions. It's a great way to ease into freezer cooking without having to come up with a huge chunk of money, time, and energy required by doing a whole month's cooking at once.
I was satisfied with the 'Healthyness' of the recipes...they are not for hard core low fat cooks, but for most of us who are trying to eat better they work. Along with Chicken, Beef, Pasta, and various seafood, there are 3 Vegetarian sessions, a Bean session, and a Tofu session to help cut back on that red meat consumption and save us from chicken overload! The nutrition information is included after each recipe.
I did spot a typo on the amount of chili powder in a recipe and 1TBL dry mustard seems excessive in the Tofu Broccoli Quiche. I plan on asking about them on the website given in the book. I will just be a little wary when making the recipes.
In spite of this, I am very satisfied with this book. It promises healthy,interesting recipes that my whole family will enjoy. I look forward to stocking my freezer with manageable chunks of time and effort. Now the answer to the 5:00pm panicked question "What's for dinner?" will be found in the freezer instead of a take out menu.
