Not having any Italian blood running through my veins I must admit to having a passionate affair with food of the Italian flare. I love the way it is cooked, carefully chosen ingredients down to the last fennel or basil seed or leaf. I love how this culture of people appreciate what they eat and how it is prepared. Each chef of Italian influence, and many other cultures using diverse appreciation of this sometimes fruit, sometimes vegetable, the roma tomatoe, are !
It is elongated shaped like an egg, red yellow or even green and still yummy to eat that is chock full of pulp but not seeds with a porous inner lining that attracts herbs and seasoning like a thirsty sponge. The roma tomatoe is luscious from the inside out with a paper-thin rind that is edible but should be checked for bruising and black spots indicating its fragile condition has been threatened and it may be beginning to rot.
When purchasing these gems from the gardens of eden make sure they are not coated with some waxy film also as the nutrients are locked in and will need longer steaming time, deterring from preparing the luscious sometimes fruit, sometimes vegetable, this type of delicious tomatoe in the first place.
Now all tomatoes are known for their antioxidant properties because of high concentration of lycopene, but some are more acidic than others and can cause distress to already hyper acidic stomachs, like mine, this one does not affect her at all. I tend to use this luscious egg-shaped gem in omelettes, salads (hot and cold), stews, soups, casseroles, and even some desserts substituting salt with a cane sugar or even brown sugar base.
Yes I have fun being creative in the kitchen. Anyway the roma can be baked, fried, fricasseed, sautéed, tossed, broiled, barbecued, boiled, pickled, and even eaten RAW ! Oh wow what a concept, something right off the vine, shined on your shirt and brought to your mouth . . .
Much of the produce in our groceries is brought in locally however it is still expensive. Beauty products and toiletries and cleaning essentials for the home, car and perhaps boat are undoubtedly far cheaper, or rather less expensive while the food we need to sustain us and nourish, is costly. But don’t sweat it too much because you do not want to buy too many of these and have them sitting around. Winter sun that is upon us soon is not penetrating enough to keep them on a windowsill so they stay fresher longer, so you have to use these delectable within three to four days of purchase.
Prices vary and expenses carry throughout each state and store but I can’t imagine these being more than $3.89 a lb or seen and purchased as low as $2.49 a lb. Check your groceries, call and compare prices but try to have at least three of these fruity vegetable gems in your fridge or on the counter for a meal three times a week.
Your body will thank you . . .
So go to the store, or run out to the veg shed and sink your teeth right in and heck, forget the salt shaker !
