I'm not a real corn-essour (puns!), but I like a few types of corn. I mostly enjoy home grown varieties (on the cob) from our garden, but I also like a few canned types, such as creamed corn. Green Giant's Mexicorn is another I like to buy on occasion to accompany a meal or to act as an ingredient. It doesn't have a real "Mexican flair" to the taste, in my opinion. But, it is vibrant and colorful, and when added to an already Spanish flavored dish, it gives your dish a lot of color and looks quite attractive on a plate.

Green Giant's Mexicorn is yellow whole kernel corn with pieces of red and green bell peppers mixed in. The peppers have a sweet flavor, which is really nice and compliments the corn quite well. There are 11 ounces of Mexicorn in this can, and you will need a can opener to get into it, like with most canned vegetables.. They sell a smaller can of this product that has a pop top lid, and is much easier to get into. That is more for single servings, however, whereas this is for families.
There are many uses for this product! I eat it plain as a side dish at times, but I also like to add it to other dishes. I have made a really pretty cornbread with this product and other ingredients. The reds and greens (and yellows of the corn) really stood out in each slice and handle baking really well. Mixed with seasoned yellow rice, cream of mushroom soup and cheese, it makes a tasty casserole. It is also really good in a southwestern stew or chili.
If you do eat it as a solo side dish, it is really simple to prepare. All you need to do is heat it in a saucepan on the stove top until it boils. You can also prepare it in the microwave by heating it in a covered microwave dish for about 3 minutes. Then....serve!

A reason I rather like this product is that it contains no ingredients that I'd have to do a "Google Search" on to figure out what they are. The ingredients are quite simple and are all ingredients that I do not mind putting into my body, or feeding to my child.

Mexicorn is found in most grocery stores and mass merchandisers that also sell food; found with the rest of the canned vegetables. I have bought them in my local Winn Dixie and Food World. I mostly buy this at Walmart SuperCenter because it is almost always 88 cents for this 11 ounce can. It's a very versatile dish, and the corn and peppers blend together to make a great flavor. Each serving does not have very many calories or fat and no cholesterol at all, so I do not feel so guilty after eating this product. I would recommend to all!
