He is a little bit about myself. Before I got married I had a set of knives that was made up of pieces from former roommates. Everything was serrated and a pain to use. I was sawing through every vegetable and slab of meat I wanted to cook and this worked fine at the time because I didn't care about cooking as lone as it killed bad bugs that would make me sick and it take a very evil bug to do that. But that all changed and I do care about cooking for me and other people.
So next on the list was to replace my knives. Being of limited funds on my quest for cutlery, I started by looking at individual knives. Thinking I'll just get one at a time to make each a more reasonable purchase (my Wusthof classic pairing knife cost me $24). Then I can across this set, at $75 it was a little bit more then what I was hoping but it contained three knives that would cost me more the $100 to buy individually. This three piece set contains a pairing, slicing and chef's knives and I view these three knives types as essentials for any kitchen and my old ones needed to be retired.
So besides being a good buy at the time, what else can I say about these knives. Well here is some advice I got from a couple of sales clerks at various stores. First, when buying knives get some info on what you are really getting. Some stores apparently get knives from Henckels or Wusthof that are made with a lower quality of steel. This is done so they can sell the knives at a lower price. Second, check the knives to see how they feel in your hands. My wife and I tried out almost every brand and make of knife at a couple of stores to see how they felt before we bought ours. For me the Henckels set were a good balance of weight. Each knife felt sturdy without being to heavy and the center of weight was just above the handle, where I like it. The handles on these knives are curved to fit your hand on the blade side and flat on the other side. I prefer this type of handle over the types were the whole handle is curved.
Do these things cut and hold there edge? As my wife likes to tell me about every time she uses them "These knives are too sharp!" and then she goes and gets some bandages. I never really thought about it but when comparing how knives cut, serrated and normal knives are different. I don't need to saw threw things any more but that also includes my fingers. After getting slugged by my wife for telling her she need to learn how to use a knife (I think she might practice on me sometimes), she does comment that these knives don't get dull and it is a joy to slice vegetables with them.
So is there anything wrong with these knives? Well they do everything a knife supposed to do, but they are not perfect. Those nice handles are made with a slightly coarse material, which is nice for cutting with wet hands but makes me use a sponge to clean them (it should be noted that I just place the blade under running water to clean it off, so grabbing a sponge for the handle seems like a big inconvenience).
