After recently moving to the East Coast I have been slowly re-stocking my kitchen. I've discovered that when it comes to kitchen knives, quality products are worth the extra price. In the past I've had Henckels cutlery and been quite pleased with their sharpness and durablity, which is why I opted for the Henckels Fine Edge Pro 8-Inch Chef Knife.

Henckels offers a large line of cutlery, from open stock to knife sets. Down the road here I'll probably get a knife set with block, but in the meantime I just needed a good, professional quality, basic chef knife. Bed, Bath & Beyond had this knife priced at a reasonable $12.99, and it was just what I was looking for. Take a look at the features of this fine piece of cutlery:

~ My Experience
The Henckels Fine Edge Pro 8-Inch Chef Knife has good balance and heft, with a professional feel. It is sharp as a new razor out of the blister package, and with some care that sharp edge will last.
The 8-Inch Chef Knife is a good all-purpose larger knife, and works great for slicing, dicing, and chopping. This will slice through meats, hard vegetables, and even bread, although there isn't a serrated edge on this knife.
The 8-inch length is large enough for most cutting chores, although you may need a longer knife for slicing a whole watermelon, for instance. But for most general cutting purposes this is perfect.
The handle is comfortable to hold with a grip at the end where your little finger fits for extra gripping. Be careful using this knife, because it is SO sharp!
I have always hand-washed this knife, although it is dishwasher safe. I haven't experienced any stains or rust, but I am careful to wash and dry it thoroughly before putting it away. I'm currently storing this loose in a drawer with other knives, which admittedly isn't the best idea because the blade can become dulled from friction against other utensils. A block might be a better storage solution, and I'll probably go that route one day soon. In the meantime, however, my Henckels knife has retained its sharp edge and functions well as a basic kitchen cutting tool, and is my go-to knife for most situations.
Henckels does have more expensive lines of cutlery, but the Fine Edge Pro open stock is satisfactory for my more limited cooking needs, and I'm happy with my purchase.
