Henckels makes a heck of a kitchen shear. They are comfortable to use, they hold their edge, they are easy to clean and store, and they are very very sharp.
Henckels TwinShears have stainless steel blades about 3 inches long. This material prevents rust in case the shears come into contact with moisture, as mine do. Their handles are made of reinforced Fiberglas. The upper blade is micro-serrated, which I believe helps keep the blade super-sharp. Additionally, located between the handles is a screw top opener, making these shears two utility appliances in one.
Henckels makes their TwinShears to hold a sharp edge for long periods of time, provided they are properly washed, dried and cared for. I store mine in the shear space of a wooden block. When I wash and dry them, I keep the shears open so that air can get to the entire blade. And, I have them professionally sharpened at least once a year, which works for me given the use they receive. They open and close with precision, even after cutting difficult materials, like crab legs. They also open and close easily. The shears are carefully honed, allowing for soft, even cuts. The Henckels are also assembled with a screw, which gives a sharpener the opportunity to sharpen each blade individually and to adjust the shears precisely.
These shears will cut very thick and tough objects, but I keep my pair exclusively for kitchen/cooking use. Because they cut cardboard, cloth, rubber and other materials, it would be worth it to invest in two pairs if you are like me and like to keep your kitchen utensils separate from your utility tools.
Some things to remember when owning a pair of high-quality shears are:
1. Keeping scissors safe
Dust, fluff and the remains of cutting material should be wiped off the cutting edges and blades. The scissors should be stored in a dry place. This is true particularly to shears because the unprotected areas of the surface are prone to corrosion in damp air. The stainless steel construction helps prevent this, however.
2. Maintaining the easy closing action
Now and then the screw slot and the between should be oiled with a drop of fine oil. Thus the easy closing force of the scissors will be maintained.
3. Regrinding by professionals only
If a pair of scissors is used extensively, the cutting performance may deteriorate. It is then necessary to seek the service of a specialist retailer of one of the Henckels shops. There the scissors will be taken apart, the inside of the blades reground, the closing action re-established and finally the blades re-honed. After these adjustments, your shears should operate as good as new.
If you follow the above suggestions, your Henckels shears should stay super-sharp, cut with precision, and give you years of good use.
