I remember Jiffy Blueberry Muffin Mix from the past when my mother made them. I just carried on the tradition....and they taste as good now as they did back then.
Jiffy Blueberry Muffin Mix comes packaged in a box and contains 7 ounces of product. The box has an inviting picture in full color of fresh baked muffins.
Give or take a few cents, you can still buy a box for about .50 cents. Always looking for a way to stretch the budget, and this isn't bad for six muffins.
The blueberries are imitation bits that are dark blue and hard. When baked, the blue bits become soft and appear throughout the muffins as dots of blueberries.
Fixing is super easy, which can be done in 15 minutes tops.
Preparation-Directions: Combine in bowl, 1 egg and 1/4 cup milk with Jiffy dry mix. Stir or whisk until all ingredients are combined, but don't over mix. Doesn't have to be creamy smooth.
Grease your muffin pan or you can use cupcake liners. I use baking spray because it's quick and my muffins never stick.
Now pour or spoon into cups about half-way full and bake at 400 degrees for 13-15 minutes (ovens may vary)

Most times I'll pull the muffin apart and spread butter on each bite I consume, and sometimes I like to use the spreadable cream cheese ...Mmmm very tasty, the cream cheese adds that extra punch of flavor, like a little sour with the sweet. The muffins come out soft and moist. Very tasty for imitation blueberries. The muffins aren't overly sweet, but just right.
Not just for breakfast. They are good anytime when you have the urge for something sweet. I've made after dinner dessert by placing a blueberry muffin in a small serving dish with a scoop of vanilla ice-cream or with a dollop of wipped cream. Jiffy Blueberry Muffin Mix is cheap with a variety of uses.
This product is made by Chelsea, which has been around since 1930...and every time I whip up a batch, it brings back memories as a child, when my mom made them for me.
