Merry Christmas to me! For my present this year I indulged in a new pizza stone. It is awesome to say the least. I would have never thought that frozen pizza could be so good. I have even made bread on the stone. The results with using the stone compared to aluminum or glass are astounding.
For a crispy Crust, go to the stone!
I have bought fresseta pizza in the past hoping for that "pizzaria taste" the commercials rave about. After baking the pizza however, the crust was always soggy, and the rest of the pizza was average.
Wanting desperatly to have a good pizza without shelling out a lot of money for takeout, I finally purchased a pizza stone.
The stone produces a dry heat which absorbs moisture. This takes away soggy crust syndrome. In a way the stone is simular to baking a pizza in a stone pizza oven that one might find at an authentic pizzaria.
The crust on my pizza now comes out crisp and flakey on the outside and soft on the inside.
The way that this works is that the stone absorbs heat from the oven and displaces it evenly to the food that is being cooked on it.
I have made bread and cookies on the stone as well as pizza. The bread comes out much better than using the aluminum loaf pan that I normally use. I love sugar cookies from the bakery. For some reason I could never get the same results with my home made cookies. I like them to be thin and crisp. Mine were always thick and chewy. With the stone they have a bakery quality now.
Using the stone properly
When baking with the stone I pre-heat the oven with the stone already inside. This is very important. If the stone isn't warmed up gradually it could shock the clay and cause it to crack. This is simular to baking clay pottery. If the clay isn't fired right it will bust when in the kiln.
Another thing to remember is that the stone can't be washed with soap. This comprimises the integrity of the clay material. I always just use warm water and a soft cloth.

Yes, the verdict is in. I love this stone. I am only sad that i didn't pursuade myself to purchase this gem sooner. It has made life easier for me, and my love for pizza.
