The Bottom Line: I recommend Kraft Jell-O Cheesecake Pudding Fat Free Sugar Free pudding mix for thickening things, but would suggest another flavor if you want to eat a cup of pudding.

Last night I made the best ribs for dinner, unfortunately I ate way too many of them and even this morning when I got up I didn't feel like eating.
Over the past 3 ½ years I have made it a habit to eat breakfast, but this morning I was still too full to do it.
Having only one daycare child, 3 1/2 year old Dani, with me today I decided to take a good walk. Yesterday we managed a 80 minute walk (no worries, I bring the stroller so Dani can ride whenever she is tired) so I was hoping for at least an hour but noticed as we walked that I was feeling much too tired and then thought about the fact that I hadn't ‘fueled up' by eating breakfast. Big mistake!
Okay, so what does all of this have to do with Kraft Jell-o Cheesecake Sugar Free Fat Free Pudding? As we were walking we were both getting hotter and hotter and it suddenly hit me that a good protein shake would not only cool us off, but it would give me the nutrition I needed too.
A few years ago my oldest daughter mentioned that using fat free, sugar free pudding is a good way to thicken shakes that are made with milk or yogurt and since then I've been using either the White Chocolate pudding mix or the Cheesecake. This morning I had the Cheesecake mix on hand.
My Protein Shake
I use 8 oz of fat free milk (or a cup of vanilla yogurt if I have it on hand) 1 Scoop of Whey Protein 1 Frozen banana or strawberries or whatever fruit I've remembered to freeze beforehand ¼ package Jell-o Cheesecake Sugar Free Fat Free Pudding mix
I put all ingredients in my Hamilton Beach Single Serve Blender and just pulse it until all ingredients are well blended.
While the frozen bananas help to thicken the shake, often it just isn't quite milkshake thick for me so the pudding really helps to make seem like I'm drinking a banana shake and at only 291 calories total I feel satisfied and I've treated my body well at the same time.
While I have made this pudding just as a pudding to eat, I don't find that it has very much flavor to it so I stick to making butterscotch pudding for myself. It didn't remind me of eating cheesecake at all. It is creamy, but just not enough flavor by itself.
Each one ounce box makes 4 servings and contains just 25 calories per serving as packaged or 70 calories when prepared.
What I really like is that there is no fat or sugar in this pudding, which helps to keep the calories down. Nutritionally there really isn't a lot to talk about. Any nutrition you would get from a dish of this pudding would be from the milk you make it with.
If you are watching your sodium there is 310g while not a lot, it is something to consider if you have high blood pressure and are watching how much sodium you consume each day.
This is a quick and easy pudding to make just beat the pudding mix with 2 cups cold milk and whisk it for 2 minutes. That's all there is to it! It'll be soft set in just 5 minutes, or if you want it a little firmer then a couple of hours in the refrigerator will do that for you. The box does caution that this pudding will not set if made with Soy Milk.
It is a little hard to decide how many stars to give this pudding mix. If I am making it just as a pudding to eat I would give it just 1 star. It is okay, but I have many other flavors I would prefer.
If I'm using it as a thickening pudding for my protein shake I give it 5 stars! It thickens it perfectly without taking away from the flavor I'm going for, either the bananas or whatever fruit I'm using. It thickens the shake to just the right consistency and doesn't add too many calories while doing it.
The top five ingredients are: modified cornstarch, maltodextrin, tetrasodium pyrophosphate and disodium phosphate (for thickening) natural and artificial flavorings and salt.
This is an inexpensive way to thicken my shakes at around 75 cents a box.
