Pros: pumpkin is nutrition packed, easy to bake with, nutrition packed
Cons: Libby's pumpkin pie recipe is not to our family's taste
When Libby's Pumpkin Pie Filling is on sale, I stock up. This year for the first time I grew and harvested my own pumpkin to make pies. But that wonderful fresh pumpkin is gone, so Libbys Pumpkin went into the cart.
Libbys Pumpkin comes in a can with a colorful orange label. Prominently written on the can front is 𣺜% Pure Pumpkin and Americans Favorite Pumpkin. The label also includes nutritional information as well as recipe for Libbys Famous Pumpkin Pie, and more recipes are on the back side of the label (there is a dotted line to cut the label off the can). Fine print on the can states that the can is for one 9-inch pie. The can holds 15 ounces.
I use pumpkin to mostly bake pies and bread. Up front Ill admit that Libbys is not the first brand of pumpkin Ill choose. My favorite brand is One-Pie. However, One-Pie is not always available and Libbys makes a fine product.
Libbys pumpkin comes densely packed in the can, and as you can imagine, its orange! Its a solid fit. After the can is opened, the best way to scoop the pumpkin free is to use either a spoon or spatula. Once the pumpkin is in the mixing bowl, it easily blends with the other ingredients. The pumpkin itself does not have a strong flavor. Its the added seasonings that make the pumpkin taste great.
Which brings me to Libbys Famous Pie Recipe I dont like it. My favorite pumpkin pie recipe is the One-Pie New England Pumpkin Pie recipe. Two recipes share some similar ingredients. However, the Libbys pie recipe uses cloves, the One-Pie recipe uses nutmeg. The biggest difference, though, is that the One-Pie recipe uses molasses. All our family agrees that the One-Pie pumpkin pie recipe is superior to the Libbys pie recipe.
The recipes I use let one can of Libbys pumpkin make either one pie or two loaves of bread. I feel good cooking with pumpkin, too, since it is low in fat and contains a healthy dose of Vitamin A. It also contains Vitamin E, iron and calcium.
The Libbys can comes with a warning not to freeze their pumpkin pie as the crust will separate from the filling. I always bake an extra pumpkin pie: one to eat that day and one to freeze (using the One-Pie recipe). I cover the extra pie with heavy-duty aluminum foil and store it in the freezer. Never has the crust separated from the filling. The pumpkin bread freezes well, too.

A can of Libbys Pumpkin regularly sells for $1.50 at my local grocery store. I keep alert for sales.
I enjoy baking with pumpkin, and Libbys Pumpkin Pie Filling is easy to use. It tastes good and is packed with nutrition. When One-Pie isnt available ... I reach for Libbys!
