It's not grandmas griddle...yet. Who doesn't remember having cornbread, fried chicken or pancakes fresh from a blackened, beatup piece of cast iron cookware. But wait I know what you may be thinking, blackened and beatup? Sounds like it's time for the trash The truth is, people strive to get these pieces to that blackened state. After years and years of use, it is broken in just like a pair of leather shoes.
For more than 100 years Lodge Cast Iron Co. has been perfecting the way cast iron is made. In recent years they have developed, Lodge Logic. These products come seasoned and ready for use. They coat the cookware with a special vegetable oil formula, and bake in the flavors in an industrial oven. While they don't have that blackened appeal right away it's only a matter of time.
I have had my griddle now for about a year. I have used it about 20-30 times, and it is well on it's way to blackened perfection. I'm a pancake fanatic, so I am constantly flipping flap jacks at the stove. I also do bacon and english muffins or bagels fried in butter. And thats only half of the story. This is a double sided unit here people! It has ridges, perfect for searing steaks and getting the awesome grill marks that just seem to make things taste better. I love using it for grilled cheese sandwiches, or a fancy Monte Cristo. The sandwiches are not sitting on a flat pan so not only do they get funky grill lines, the bread gets toasted, not crusty and hard.
I love the fact that when I fry bacon or sear meat on the grill, it does not sit in it's own grease. It has a little grease drip "canal" that keeps all that fat off to the side. Not only is this griddle/grill great but any piece of cast iron cookware with worth it's weight in gold. I would highly recommend a fry can as a cast iron staple.
Cast iron is easy to care for as well. Just rinse it with hot water scrub with a stiff brush, never use soap on your cast iron. And don't forget to completely dry it off afterwards so it's doesn't rust. Then spray it with Pam, wipe it in with a paper towel and it's ready for the next use. Don't try to hard to clean it though because remember each time you clean it you are seasoning and the flavors will come out every time you use it from then on. Why cast iron? It is superior to other metals it has even heat distribution, heat retention it's no wonder why so many great chefs swear by it!
