In the case of chicken, I recommend The Compleat I Hate To Cook Book. :) Great faux-barbecue chicken recipe involving garlic salt and brown sugar that takes about 5 minutes plus cooking time.

I have raw chicken sitting on my counter needing to be marinated and cooked. If you don't recommend this cookbook, what should I do for dinner?!! I know! Get the husband to cook it. Now there's a smart chef.

I do enjoy marinades, I admit, but then I'm a flavor fiend. And it's hard to find really good cuts of beef quite as much where we live now. :) I just wasn't impressed by these. There's a Cambodian cookbook that has a very simple marinade for beef, mostly of mushroom soy sauce, that's so much better than anythiing in here. (Although the trick with mushroom soy sauce is not to marinade in it for more than 20-30 minutes at most - it's incredibly effective!)

Although I love marinades, I just find that the sweet/salty/acid balance has to be right. And this guy had no clue on that front!

the best marinades are the simplest. All those exotic seasonings you mention sound like they'd even make shoe leather taste good, but then why buy good meat in the first place?

I love beef, too, and I buy the best when I can find it on sale. Next comes lamb, veal, pork and then chicken. I seldom cook fish because it's too expensive for my budget. When I do get it, it's a treat and I use the simplest of seasonings.

I stick to the basics and hardly ever marinade unless I'm doing something in the wok. This was a great review and I won't be getting the book. I'll stick to stuff like salt, pepper and lemon juice.
