This is the one of the very best cookbooks ever written. When Julia Child stepped onto the food scene in the early '60 she started a revolution that changed the way Americans think and feel about food. By taking the mystery out of haut cuisine and proving that we could all do it at home with a little thought and practice, she paved the way for every successful T.V. chef since. An entire industry of fine cooking equipment and speciality food was created to satisfy all the new cooks inspired by this book. Truly a seminal work!
I was barely a teenager when Mastering the Art of French Cooking was published. Food in our home was pretty typical American fare, roast meats, over-cooked veggies, Jello pudding. My mother brought Julia into the kitchen and it was love at first sight for both of us. I can honestly say that Julia Child and co-authors Beck and Bertholle taught me to cook and I am forever in their collective debt.
Thanks to the comprehensive way this book is written and organized, it is possible for a kitchen novice to progress nicely in technique and expertise easily and comfortably. Essential equipment is described clearly. Technique is explained step by step with clear rational for each task. None of that "just do it this way" but "this is WHY we do it this way" the food will taste, look, or feel better. Naturally, learning why foods are handled in a certain way makes it much easier to experiment with similar foods and soon be on the road to original culinary creations.
I still own that copy of Mastering..., it is spotted, dog-eared, broken-spined, and chock full of my culinary history. I made my first souffles, sauces, cakes, butter creams, roast ducks, pate (the list is endless) from recipes in this book. Here I found the "perfect" pie crust, best mayonnaise, and yummiest fruit tarts. I own lots of cookbooks, but could be happy with just this one. If there is a budding cook in your family, give them this book and you will never be forgotten.
