Pros: crunchy, thin and tasty: have not changed over the years.

Cons:can be hard to find

The Bottom Line: icebox cake is likely one of the more simple treats you can create plus being one of the best tasting desserts on planet earth.

Icebox cake made from Famous Chocolate Wafers has got to be one of the easiest, no fail recipes around. Those luscious ice box cakes our grandmothers and mothers made back in the 50s and 60s are becoming more and more difficult to replicate today.

An essential ingredient, the Famous Chocolate Wafers from Nabisco, until recently has been increasingly impossible to locate. These dark chocolate wafers are crunchy; thin and tasty and appear to have not been changed over the years. The wafers continue to be the product of choice in recipes calling for a chocolate crumb crust.

Famous Chocolate Wafers are the chocolate wafers kids in my generation grew up with. Delicious munched out of hand they are extra good with a cold glass of milk when kids burst through the door; home from a day at school.

If you have never tasted the icebox cake illustrated on the box of Famous Chocolate Wafers; it is likely one of the more simple treats you can create in addition to being one of the best tasting desserts on planet earth. Sad to say; The wafers are not particularly strong sellers in supermarkets today and have become increasingly difficult to locate on grocery store shelves. NOTE: One place to check is not the cookie aisle, but RATHER the aisle where ice cream toppings and the like are located. The Uneeda Biscuit was introduced in 1898 and was the first product to bear the name of the National Biscuit Company, which later came to be known as Nabisco Foods. Famous Chocolate Wafers have been around since 1924, per Nabisco's archives. Uneeda Bakers, a long-ago division of the National Biscuit Company today known as Nabisco, originally offered chocolate wafers along with ginger and sugar wafers. In due course, the latter two flavors were discontinued, however the chocolate ones continue.

A 1929 advertisement proposed that Nabisco Chocolate wafers be layered with whipped cream and refrigerated overnight for a trouble-free, modish dessert. The recipe appeared printed on each round tin containing the chocolate wafers in 1930. COLLECTOR'S NOTE: Now and then the old tins can be located in jumble shops, antique shops or on line. During the 1920s and 30s ice boxes were disappearing as refrigerators were coming into their own. Store shelves in early days often offered products in containers other than the paper packaging we have grown used to seeing.

Chilled desserts often called charlottes were enormously up-to-the-minute in the U.S from the 1870s to World War I. To make a charlotte line a pan ladyfingers or sliced sponge cake and fill with cooked custard or flavored whipped cream that has a little unflavored gelatin added for stability. The icebox cakes that became so popular during the 1930s (and on through the 50s and 60s) took the charlottes a step further and began using wafers and cream to produce quick and delicious desserts using those new fangled refrigerators.

From the late 1880s, thin chocolate wafers, never called cookies, were popular. My grandfather, 1881 -1961 was especially fond of wafers; he spoke of them, introduced them to his grand daughter and ate them often.

Recipe: ICE BOX CAKE: from the original on the wafer package
1 package Famous Chocolate Wafers
Heavy Whipping Cream
Vanilla Flavoring

Whip the cream in a cold bowl
Add one teaspoon of vanilla flavoring and sugar to taste
Whip cream fairly stiff before spreading cream between the wafers
Lay wafers to form a log
Use remaining cream cover the log
Refrigerate for at least 4 hours

Cut diagonally into 10 to 14 slices so that dessert has the appearance of being layered.
If you prefer individual servings: place four or five wafers together in a smaller log.
