I am enjoying the Oxo professional series of cutlery. One of the pieces I own is the Oxo Good Grips Professional Boning Knife.
Description
These Oxo Professional series knives are constructed from hardened stainless steel with a no-stain blade. The blade is full-tang for added strength and balance. As with all Oxo Good Grips products, the handle has a comfort non-slip grip. The handle is also ergonomically contoured. At the end of the knife, on both sides, is a silver oval disc with the Oxo name.
This knife blade is 5" long, and so is the rubberized handle. Overall the knife is 10 3/4" long, which includes the metal shank between the handle and blade.
Compared to the other knives in the Professional Series, this knife blade is shaped much differently than the others. The blade is wide at the shank and curves upward to form a narrow blade. The blade also ends in a sharp tip.
My Experiences
Out of all the knives I own in this series, this blade is the one I use least. Dont get me wrong. This knife is sharp and works well. Its just that I dont have a need to cut much meat. So why did I purchase this knife? My mother wanted me to. I bowed to pressure (grin). She says every knife set needs a boning knife. I had an empty slot in the knife block, so it seemed a good idea.
The way this blade is shaped, the knife is excellent for precise cutting. Oxo says this boning knife is ideal for removing bones and trimming fat from meat and poultry. It does a terrific job with both raw and cooked meat. Though when I use a knife with raw meat, I partially freeze the meat for easier cutting.
One would think that with a narrow blade, that the blade might flex. Not so with this knife. This is a solid blade that holds its position when cutting. The no-stain blade has stayed clean, too.
I like the comfort grip on Oxo knives. My hand does not slip when using the knife. This particular grip feels solid in the hand, and I know Im holding this knife by the weighted handle. The grip is comfortable, though, which is important.
There is one thing that bothers me. The rest of the knives in the Oxo Professional Series have a silver oval with the Oxo name at the end of handle tip.. This knife has the rubberized grip material on the end, and the silver oval is placed on both sides of knife handle. When the knife is in the knife block, it looks out of place with the oval missing at the end.
Cleaning & Caring of the Knife
This Oxo knife is not dishwasher safe. The instructions that came with it say to hand wash the knife and then to promptly dry it. I use Dawn dishwashing liquid in warm water and then immediately (and carefully) dry the knife with a paper towel.
I store this knife in a knife block. This not only protects the knife blade but is also a safe way to store knives so that there are no accidents.

This knife retails for $16.99. Look for sales as it can be bought for less than this price.
Summary
This Oxo Good Grips Professional Boning Knife is a nice addition to my knife block, even though it is not used as often as the other knives. The blade is sharp, and it cuts meat like a dream. Im happy my mother suggested this purchase.
