Pros: EXPENSIVE but worth it nutty fruity crumbly hard Italian cheese

My fellow Epinioners know I look for value, safety and healthy in ALL of my products I review. If it does not meet my standards, you probably won't find a recommendation for it by me, here. So without further adoo I give you what I know about expensive cheese from a place I visited back in 1984 when quality, as is today shown in their products, is still a Bonati family tradition.
Now on with the review . . .
|| ABSORPTION/ ASSIMILATION ||
This product is finely grated off the huge block it was purchased in and using the fine edge of a great shredder really produces the best flavor-ful cheese tidbits, pulverized.
Therefore with passing through the digestive tract when added to the hydrochloride in the stomach there is room for fermentation and sitting around. Parmigiano Reggiano, Bonati Riserva Cheese (Whole Wheel) (Gourmet) is much harder & derived whole cows milk no processing or fat-leveling/ removing, so it sticks with ya, literally !
With that being said, a thin person can benefit from eating Parmigiano Reggiano, Bonati Riserva Cheese (Whole Wheel) (Gourmet) this dairy ecstacy because it provides nutritional value, stamina and tolerance to energy quicker metabolism and feeds them for a few hours longer than the average meat-eating individual. Fat burns fat also so keep in mind if most of cheese is fat, most will assimilate so little is eliminated.
|| ALLERGY NOTE ||
A lactose intolerant person will experience difficulty in properly metabolizing Parmigiano Reggiano, Bonati Riserva Cheese (Whole Wheel) (Gourmet). Because it is much harder, less water-soluble fat density exists and it is tougher to digest, a milk intolerance is lethal pain producing.

In the plastic round tub it is housed in you see the pale ivory to white colored teeny weeny granules of hard Parmigiano Reggiano, Bonati Riserva Cheese (Whole Wheel) (Gourmet) grated cheese. The neat part is a lot of the time you get the rind towards the end of the cheese and that to eat alone, divine ! Shredded and finely grated this powdery cheese is not chalky, nor gritty and looks extremely delicious.

Well here is where the review for Parmigiano Reggiano, Bonati Riserva Cheese (Whole Wheel) (Gourmet) gets tricky-- if grated from a bulk chunk at a deli, the cost can be as much as $30.oo for a ¼ ounce of this stuff ! I mean it is cows milk, but you figure a huge 80lb wheel of this cheese runs consumers here in the United States about $2100.oo and some change for cheese. WHY ? Because it is soooooooo worth it.

This particular blend is made in Emilia-Romagna Country of Italy. The type is classified as hard, dry and caramel-flavored o reminiscent of yuminess !
The recommendation for pairing dairy with red wine alcohol is as follows: Full dry whites; full reds. The Parmigiano Reggiano, Bonati Riserva Cheese (Whole Wheel) (Gourmet) Wheel Weight is approximately purchased in bulk coming in at 75 lbs. The source is of course animal protein known as Rennet.
The aging process for the cheese to be most succulent and perfect for serving is 2 years. The fine producer behind this cheese is the family: Bonati.

It will keep separated and prepared as such far longer than in the ‘wheel’ form.

Made in a very small dairy only four wheels are produced per day by the Bonati family living in the provinces of Parma, Italy in Europe. The recipe has been the same for decades and the quality unbeatable. You are what you eat is so true when the milk from the cows who ingest a diet rich in hay, oats, orzo corn flakes, dried fava beans and soy.
These natural ingredients in the cows main food supply gives the result, their delicious milk a earthy, nutty, dried oatmeal-ish, maize, and of course soy bean texture smoothness with sweet delicate rich buttery type taste. The Parmigiano Reggiano, Bonati Riserva Cheese (Whole Wheel) (Gourmet) made from that when dried and left alone, is AWESOME !!

On a bulk package of 80 or more lbs Parmigiano Reggiano, Bonati Riserva Cheese (Whole Wheel) (Gourmet) and of course less than 2 lbs, I found no nutrition facts to support caloric intake information, so I am at a bit of loss here.
|| POSITIVES ||
One who is a mouse like me and LOVES CHEESE, knows that the best thing about it is that it fills you up a little at a time. There are so many varieties and softness versus hardness, flavor versus smell and longevity versus versatility is always fun with the plethora of choices a dairy enthusiast seeks. The best way I know how to get calcium rich taste is a piece of cheese.
|| SMELL ||
Very pungent, sweet aroma erodes from the swirling of the granules with a fork or other utensil. I find Parmigiano Reggiano, Bonati Riserva Cheese (Whole Wheel) (Gourmet) it equally laced with a subtle hint of bleu cheese or maybe Roquefort, but am not certain. Either way the smell tantalizes me to eagerly sprinkle some on ANYTHING !
|| STORING ||
It is best to keep this Parmigiano Reggiano, Bonati Riserva Cheese (Whole Wheel) (Gourmet) away from as much moisture and heat that also mean direct sunlight not just away from the oven, and even freezing temperatures as possible; the requirement for storing and then serving pure deliciousness is room temperature sealed tight in a plastic canister or if grated, a jar.
|| TASTE ||
You can imagine a crumbly fruity a bit grainy textured salty sprinkled cheese on a toasted plain English muffin, then you get Parmigiano Reggiano, Bonati Riserva Cheese (Whole Wheel) (Gourmet)a hard dry cheese. It is splendid with white wines and red wines; although I prefer it sprinkled over my Italian tomato spaghetti sauce or even plain egg noodles laden with butter and voila, dinner for one !

To permeate a nutty gradual flavor enhancing element to any Italian entrée, soups, stews, casseroles of either poultry, beef or even some fish like walleye or halibut or scrod or haddock-- while Parmigiano Reggiano, Bonati Riserva Cheese (Whole Wheel) (Gourmet) it adds flavor is does not melt exceptionally well UNLESS added to a kirsch wine perhaps to melt into regular fondue cheeses.
|| WARNING ||
As always too much of a good thing is never good and on the elimination quadrant of eating and digesting, too much hard cheese is bothersome and uncomfortable on sensitive tummies. If you are drinking wine don’t hesitate to keep thinking fermentation was given a head start, cause it was and is and again don’t over-indulge no matter how good it tastes.
|| FINAL NOTE/ OVERALL RECOMMENDATION ||
This better be a little more inexpensive before I can have a tub of it in the fridge every week. At $5.13 with tax for only 0.27 ounces, even as a gift of which I was completely appreciative, I don’t want to spend that much on great cheese. If you want excellent hard rich flavor that two long years takes to produce, then pay the piper and enjoy Parmigiano Reggiano, Bonati Riserva Cheese (Whole Wheel) (Gourmet) as this mouse does !
