Already an Icon in the tequila culture, Porfidio owes much of its sucess to the Single barrel añejo, an awesome example of the best the world has known in extra aged spirits.
As much as I hate the common belief that tequila comes from a cactus (WHICH IS ABSOLUTELY FALSE!), a situation that Porfidio has a lot to do with, So many tequiliers around the globe still consider this Añejo as one of the top 3 ever (Along with Casa Noble and Herradura Seleccion Suprema). Many collectors started with this highly distictive bottle, a matter of pride and joy.
The tasting experience is spectacular and fulfilling in every aspect: superb aroma, amazingly complex, unbeatable flavor structure, smooth texture and perdurable finish. What else can you ask for?
Since taste is a personal matter, and preferences are based on subjective issues, I must say that Porfidio has achieved a substancial amount of loyalty to their Añejo relying only on superior consistency in their products. Yet, every new encounter with Porfidio Añejo is a different, memorable experience to me.
Bouquet: plethoric of fine white oak and fully matured agave, smoky and yet herbal at the end. Hints of sweet almond oil can be traced from the beggining.
Mouth: robust, powerful wooden tones found in only the best aged spirits, rival to most VSOP cognacs. Mellow agave, sweet, sharp attack at the beggining, easing down as the palate settles into the spirit. Powerful alcohol presence, in a tasteful, elegant manner. Primary flavors are oak and smoked tones, roasted almond and of course, slow cooked, fully mature agave. Lets face it: these guys really make an outstanding job in the agave selection process.
Extra care is taken in the fermentation and distillation process, as the texture, color and consistency demonstrate. Nothing tastes artificial in this añejo. The retronasal pasage is the final challenge for this drink: pure. unaltered agave and oak aftertaste, long, penetrating, delicious, satiny, where it is possible to pick up vanilla, chamomilla, sweet almond oil and cloves.
Cognac, single malt whiskey and even premium aged rum drinkers will really love this tequila. No mixing or ice please, its sacrilegious!
Always use a snifter, and never fill over the end of the curvature. enjoy the bouquet loooong and paused. Sip slowly, inhale deeply, exhale trough your mouth. Light up a Cohiba, bahía, Montecristo or other quality cigars....pure hedonism!
