Republic Restaurant, (37 Union Square West. Between 16th and 17th Streets)
has become a regular part of my restaurant itinerary. It's not just your everyday noodle shop. It was designed by the noted French architect Philippe Starck. The design is clean, and crisply modern. The dining tables are large communal wooden picnic tables, the last time I was there I shared tables with a group of beautiful long legged fashion models. It attracts a trendy, stylish crowd, but don't be intimidated by that. The staff is friendly and the restaurant is run very efficiently.
Once you are seated, you'll order from your waitress that has a high-tec
ordering pad (it kinda looks like a Palm Pilot) that sends your order directly to the kitchen. As soon as you get your drinks, you appetizer will soon follow. The greatest feature about this restaurant is the speed that which your order arrives. Even though Republic is very popular (read as busy) the service is extremely swift - though I've never felt rushed out.
The food is excellent, as is the presentation. My favorite appetizer is the grilled calamari which is served on wooden barbeque skewers (They also have the same appetizer but with chicken - if you don't enjoy squid). All of the food is Asian. But not your traditional Asian cuisine, it's Asian-fusion. Abit of all Asian cultures. Being a 'noodle shop' most of the main dishes are noodle (and soup based). Though one of my favorite dishes is the Vietnamese Grilled Beef with rice vermicelli noodles. Yumm.
Though it is a well designed space, and attracts a stylish, trendy crowd it is rather inexpensive. A great place to have lunch. Not really recommended for a romantic meal for two, but good for a gathering of friends.
