I never claimed to be an excellent cook but in my heart, I know Im a good one. When I decide to make a really good mean, rather than a quick one, I want to use the right tools.
Just a few days ago, our friend and neighbor arrived home after a weeklong trip to North Carolina where he and his buddies chartered a boat and fished their hearts out. Their prize catch was a whopping 695 pounds of yellowtail tuna!
After dividing the fish among the six men and tossing the waste away, each went home with about 110 pounds of fresh fish (now frozen for their trips home). So what does one do with more than one hundred pounds of fish? Give it to the neighbors! YIPEE!!
I dont know if youve have had freshly caught tuna but I can tell you this, it does NOT taste like the canned stuff. Once you eat the fresh, the canned will never satisfy you.
Oops! Im getting away from myself here. Let me get back on track.
I have a great recipe for grilled tuna steaks (you can use the same ingredients to bake them). I found it on cooks.com.
After placing the ingredients (except the fish) in a bowl, they need to be mixed thoroughly. Any kind of electric mixer just splashes the liquid around so a whisk is more appropriate.
My choice of whisk? The Rosle 10.6 inch twirl whisk.
Why?
First of all, from one end to the other, it measures a full 10.6 inches which makes it much easier to use. Its not too long where you feel awkward and not too short to hamper mixing. The length is also great for mixing things in long narrow containers.
The spiral mixing edge is exactly 2-1/4 inches in diameter. This is perfect for complete and thorough mixing. It breaks up any clumps and mixes oil and other ingredients without a problem.
Although Ive used this particular technique, Ive heard you can put the handle between your palms and twirl briskly. As I said, Ive never done that because I know me. Somehow, Id manage to hit the side of the bowl (or container) and everything would end up on the floor in one big mess. Im very happy using one hand.
It fits nicely in your utensil drawer but if you dont have one or prefer to hang your kitchen tools on a rack, the handle of the Rosle Twirl Whisk has a ring for just that purpose.
Its completely dishwasher safe and made of stainless steel to insure against rusting. Unlike cheaper whisks, the Rosle Twirl Whisk has no open seams so its also completely waterproof.
Another thing to consider when deciding on which whisk to buy is the fact that Rosle offers you a lifetime warranty against manufacturer defects.

The spiral part of this whisk is kind of like a spring. Its not a forced solid fixture but a free spiral that moves as you mix allowing you to get every side, bottom and corner of your bowl.
Now that I have used this whisk, I am seriously considering kissing my hand mixer goodbye! Well, at least the for small stuff. LOL

Okay here it is:
You can use this on grilled, baked or broiled tuna steaks.
1 large clove of garlic (or 1 tsp of garlic powder)
6 tbsp. Olive oil
1 tsp sweet basil
1 tsp salt (I only use sea salt - freshly milled)
1 tsp pepper (again, only pepper corns - freshly milled)
1 tbsp. Lemon juice
1 tbsp. Parsley (chopped)
AND your tuna steaks
Combine all ingredients (except fish steaks) and mix - with your whisk). Using a basting brush, baste both sides of the steaks and place:
1. in your grilling basket
2. on your broiling pan - - or
3. in an oven safe dish
basting frequently.
Using a grill, grill 4 inches from heat source for about 10 minutes (5 minutes on each side providing the steaks per every inch of steak thickness).
Under the broiler, for every inch of thickness, you will want to cook them only 4 minutes on each side.
If you bake them, cook them uncovered for about 15 minutes on each side.
Use whatever side dish you prefer because no matter what you server with your fresh tuna steaks, it will be enjoyed!
