There is nothing worse then trying to make cookies that require brown sugar and your brown sugar is hard as a rock. Since I work at Sur La Table, I have the chance to buy useful kitchen gadgets for my house, and soon to be my apartment. I bought the Brown Sugar Saver that is distributed by JBK Holdings Inc. The Brown Sugar Saver retails for $2.95.
About
The Brown Sugar Saver is an eight-sided ceramic disk with a sun on the top. It is almost 3 inches in length and a clay color. It weighs 1.7 ounces. These break very easily so be careful. It comes in a little plastic baggy with directions at the top. As stated on the website, it also keeps dried fruit, marshmallows, fruit cakes, raisins, popcorn kernels, and cookies moist when sealed in an airtight container.
From the JBKpottery website: It is made from a specially compounded blend of heat treated clays designed to retain moisture and distribute it evenly and over a period of time.
Directions
You must soak the disk in water for 15 minutes, pat dry, and place in brown sugar. The brown sugar must be placed in a sealed, airtight container, preferably in a dry place with minimal temperature change. Every 3 months, the ceramic disk must be dried overnight, then re-soaked and then can be used for another 3 months. An idea is to put a post-it note on the container to remember when you need to re-soak the disk.
Experience
This is probably one of the simplest things to use. I put the Brown Sugar Saver in a bowl of lukewarm tap water for 15 minutes, pat it dry, and put it into my brown sugar container. Ever since, my brown sugar has not had a clump or hard rock. It is so much easier to cook things just taking a scoop of the sugar and not having to do numerous other methods (nuking it in microwave, breaking it up with my fingers, putting it in the refrigerator the night before, etc). The disk does not impart any flavors to the foods, and has not decayed or molded. My brown sugar is soft and broken up, and a lot easier to cook with. Its wonderful!
My sister has been buying a lot of dried fruit lately and storing them in containers, so I bought her another one to use to the fruit doesnt harden and become inedible.
For what I paid, and even for the $2.95, if you are a baker and use a lot of brown sugar, this is a necessity that everyone should have in his or her kitchen.
