Cons: Windows are too small to fully appreciate the view, but some outdoor dining is available

That's true. As long as someone was willing to put the effort in, it was an easy goal to accomplish. They do an excellent job of it regardless, though.

I really liked Jerome and would have loved to visit the other restaurants. I believe the English Kitchen (not sure if that name is quite right) was open during the town's heyday, but don't know if operation has been continuous. However, the Jerome Grille gave us an excellent breakfast.

I also highly recommend Bisbee, which is in the southern part of the state. It is another ghost town which managed to retain more of its population and the buildings downtown are better preserved.

you mention that this is jerome's only posh restaurant, but considering that they really have very few restaurants in the first place, I think it's to be expected ;)

we drove through the town last time my other half and I went back to AZ to do the family visiting thing... next time, perhaps we'll have to get out and look around a bit more :)
