Rachael F. Heller - The Carbohydrate Addicts Cookbook: 250 All-New Low-Carb Recipes That Will Cut Your Cravings and Keep You Slim for Life
saprswife's Full Review: Rachael F. Heller - The Carbohydrate Addicts Cookb...
When contemplating going on a low carbohydrate diet, I envisioned meals that consisted of plain entrees of meat, eggs, and cheese and being forced to live off tuna salad, bacon, and eggs day in and day out. With cereal, bagels, and pasta out of the question while on the Carbohydrate Addict’s Diet what is there to eat? Drs. Rachel and Richard Heller have succeeded in producing a comprehensive cookbook to supplement the already large variety of recipes found in their bestseller diet book The Carbohydrate Addict’s Diet.
I bore easily. I admit it. I love to cook and experiment often with different recipes. Because of this, my poor husband sits down to the table almost nightly to a new creation. Strangely, one of my biggest worries about going on a low-carb diet was the inability to try out many new recipes. I couldn’t have been proven more incorrect once I found the Carbohydrate Addict’s Cookbook.
The Carbohydrate Addict’s Cookbook has 250 recipes with everything ranging from breakfasts to dressings to vegetarian meals. This book has a little something for everyone. All of the recipes can be used for the 2 Complimentary meals that are eaten daily in the Carbohydrate Addict’s Diet. It is also stated in the introduction that these recipes can be used in other low-carb diets, such as the Atkin's, Sugar Busters, Protein Power, and others.
Preceding each recipe is a short paragraph that shares something special about each one: its history, a special memory behind the recipe, etc… Try the Saucy Cheese and Eggs that remind the authors of their first home, a pre-Civil War farmhouse, or the Classic Roasted Chicken that brings back fond memories of Dr. Rachel Heller’s mom. (Ok, a tad sappy but...)
All of the recipes I have tried so far (20+) have been very flavorful and have made a potentially dull diet quite enjoyable. The recipes are easy to prepare and some are fancy enough to prepare for dinner guests such as the Cornish Game Hen Supreme which is stuffed with a variety of chopped vegetables instead of the usual bread stuffing.
Most of these recipes can easily be made ahead of time so that you are not spending an eternity in the kitchen everyday. Simply make up several different recipes at once and then reheat them over the course of a few days.
One cannot live on bacon and eggs every morning while on a low carb diet. How about chicken roll ups, buffalo wings, or chicken salad?? Though not your conventional breakfast, it sure is a welcomed change from eggs. Sandi’s Chicken Salad and the Baked Buffalo Wings are now a staple in our breakfast menus.
There are several recipes that are wraps (Steak in a Blanket and Cold Chicken Roll-ups to name a few) using lettuce leaves instead of the usual bread, tortilla, or pita.
The book is broken down as follows and a sampling of recipes are included as well: Appetizers & Soups Marinated Tai Chicken, Swedish Meatballs, Herbed Cheese Dip Breakfasts Baked Buffalo Wings, Cheesy Horseradish Sticks, Breakfast Pockets Dips, Dressings, & Sauces Zippy Lemon Dressing, Amazing Onion Dip, Tangy Mustard Vinaigrette Beef & Veal Herby Beef Tenderloin, Celery Steak Stir-Fry, Left Bank Burgers Lamb Tarragon Lamb, Mediterranean Shish Kebab, Saucy Ground Lamb Pork Paprika Pork Chops, Shanghai Pork Roast, Tangy Pork Chops Poultry Chicken in Cream Sauce, Gingery Chicken, Island Lime Chicken Seafood Classic Shrimp Scampi, Mixed Seafood Salad, “Down Under” Grilled Fish Salads Creamy Cucumber Salad, Taco Spinach Salad, California Greek Salad Vegetables Spicy Creamed Spinach, Super Stuffed Mushrooms, Cheddar Cabbage Vegetarian Alternatives Manhattan Mushroom Salad, Far East Tofu, Queenstown Spinach Quick Fix Dishes and Snacks Poached Salmon Northwest, Tangy Steamed Cauliflower, Tarragon Lamb Chops
The recipes contained in the Vegetarian Alternatives really could have been placed throughout the book. Drs. Heller, however, wanted to place them in a special section so that vegetarian dieters would not have to scour the book for appropriate recipes for their lifestyles. It includes salads, soups, and a few entrees containing tofu.
For those on a low carb diet or those who would like to incorporate low carb meals into their diet this is a wonderful addition to someone’s cookbook collection…it definitely takes the bore out of low carb eating!
