This board may well replace your old hardwood board in the kitchen. It's light, durable and easy to care for. Sanitation is critical in food prep, and bamboo is bacteria resistant.
Most bamboo cutting boards are of the smaller order. This one is about the perfect size for maximum capability. Go much larger with bamboo, and laminations are at risk of splitting. For herbs, vegatables, any meat smaller than a whole chicken - this board is perfect. For anything larger, or anything that needs heavy blows with a cleaver, stick with a larger hardwood surface.
Maintenance on bamboo is required, but much less frequent and more forgiving than hardwood. Just rub food-safe mineral oil on all surfaces, at least once a month, and you'll be fine. Use hot, soapy water after processing meat, especially chicken. Use sea-salt and hot water for all other post-work cleanup.
The thickness of the board is key when performing heavy knife work - This one is ideal for potatos, onions and chopping carrots or flank steak. The light weight and medium thickness will damper noise when chopping on the counter.
The dishwasher will destroy this board. (If a cutting board is split, or cracked, it is no longer serviceable.) My friend's other half used my kitchen while I was away - And the end result was two ruined cutting boards and some rusted cast iron.
When cleaning, ALWAYS wash both sides of the board, not just the cutting side. Bamboo expands when wet, and you'll want a uniform coverage of hot water on both sides. If the board appears to crown or bow (like a taco), re-wash with hot water on the crown side, then on the concave side, and you'll see it realign before your very eyes. Keep this even-sided washing tip in mind and you'll be fine.
Not-so-desirable traits of the product: The radius edge doesn't lend itself to standing on-end for drying on the counter. Unless you have a paper towel or dish rack in place, the board is likely to slide and slap down flat on the counter top. This may or may not be a design issue, but it is important to remember that cutting boards need to be dried on-end to ensure even wear.
