I wanted to start making my own raviolis instead of buying them. I wasnt really happy with many of the fillings available and I wanted to make something special. I went ahead and made raviolis from scratch one day and even though they tasted good it looked horrible. I wanted something that would not only make the ravioli look more professional but also make it easier to create. I saw this and thought it would fit the bill.

What does it come with?
It is a two-piece system. The first piece is a metal tray with 10 round holes. The second piece is a plastic tray with half-circles on the bottom. The plastic piece creates depressions in the pasta where the filling can go into.
In addition to these two pieces you will also need a rolling pin and the equipment for creating your own pasta (Pasta roller, food processor, or whatever it is you use.), these items are not supplied.
How it works.
You need to make your dough first. Once you make the dough then you need to roll it fairly thin. This can be done with a roller but I use the Villaware Chrome Pasta machine. I usually go to setting 2 on it. Setting one can be used but your pasta is much more prone to breaking because it is so thin. Once you have the pasta rolled you will cut the pasta into 2 sheets that are at least 12.25 inches by 4.5 inches. Place one sheet on the metal piece (the one with the holes and ridges). Then you use the plastic piece to create the depressions. If your pasta is too thin then it will break at this stage. Remove the plastic depression maker and begin to add the ravioli filling to the depression. Do not over fill it or you will not be able to seal the edges properly. Then take the second pasta sheet and place it over the first piece. At this time you grab your roller and roll over the pasta on top of the metal piece. This step seals the edges and cuts the ravioli into 10 individual raviolis. Carefully remove the ravioli and cook.
My overall thoughts
This device makes the process very easy. It is straightforward and easy to use once you get the pasta dough just right. But this tool is only for people that are into cooking. If you do not find it enjoyable to make pasta from scratch then I do not recommend this product because the process of making ravioli takes some time and patience.
One of the problems I have encountered is if dough is too sticky then it will stick to the mold. Then you run the risk of breaking the raviolis when you try to release them from the mold. But if the dough is just right (which takes a bit of practice) then they pop right out.
The other problem is with the ravioli holding together. If you over stuff the ravioli or if the pasta dough is made properly then you will not have this problem. If the dough is too dry or has too much flour on it, then you will have problems with the edges sealing.
Some stuffing ideas.
My first experiment was just a bunch of grated cheese for my cheese filling. The problem with this is the cheese failed to completely fill the cavity, it just melted down and I ended up with a very large air pocket inside the ravioli. It tasted good, but not what I was looking for. What I needed to do was melt the cheese first or make a cheese sauce.
I then went ahead and used some good tomato spaghetti sauce with sautéed mushrooms. It came out wonderfully. If you have garden fresh tomatoes (like I currently have on my porch) then you can blend those up with a stick blender and use that instead. Fresh tomatoes taste a lot better then any canned product.
The third experiment was with cooked sausage in a cream/cheese sauce. I make a homemade cream sauce with heavy cream and several types of white cheese. This sauce also worked well in raviolis.
I have not experimented with anything weird but as long as it is in a semi-liquid form, then it should work as a stuffing.
The unit is easy to clean. Just get a sponge and quickly wash it under the sink. I have also put it in the dishwasher with no ill effects. The metal also has not begun to decompose or rust.
I have not had any durability issues with this device. I do not see any cracks or any part that can break on either piece. The plastic is relatively hard and will not crack under normal use. The metal will not bend even with the pressure of a rolling pin on it.
Dimensions and weight
The ravioli pieces are 2 inches wide. The plastic depression maker creates a depression that is almost .75 inch deep. Both pieces weigh 13 ounces together.
Who is this for
I recommend this for people that love to cook and have always wanted to make their own ravioli. Ravioli actually can be made easily by hand so this tool is not necessary. But this tool does make it a little easier, a little quicker, and a lot more professional looking.
This is a simple device that makes ravioli making a little easier. It creates uniform ravioli. The product is durable and well made. The only issue I have had is that sticky pasta will not release easily from the mold, but if the pasta is properly made then you should not have that problem. It is a great gift for someone that loves to cook.
