What is it about Weber barbecue grills? I grew up with a Weber because my parents had one from the time we were kids.

Grilling used to be more of a man job. Back when we were kids, my Dad did the grilling and Mom never touched it. Rain or snow or summer, we used our Weber grill. Then when I first got married, my parents bought us a Weber grill of our own. I no longer have that husband but he got that Weber grill! Go figure. He still has it to this day and we're talking over 20 years that the same Weber has been going strong.
More recently we were using an old "weber clone" grill, a very small and very cheap one, since we live in a very small place. That lasted a few years. We just decided to "splurge" and go for a real Weber, and a larger one too. Last week our local hardware store, OSH (Orchard Supply Hardware) was having a no tax sale, so we decided the time was right to get our new WEBER One Touch Silver Barbecue Grill and also pay no sales tax.
Well, we've already used our new Weber three times and we only bought it a week ago. Guess we'd been feeling charcoal grilled deprived for the past year.
I think what makes a WEBER grill so good is it's design. It is a kettle shaped drum and rounded lid. The hot air circulates within and around the dome lid. The lid has a hook on it, for convenient hanging if you need to remove it during grilling. The handle is made of glass-reinforced nylon. The wheels are guaranteed not to crack or split in any weather.
Weber makes a variety of gas grills and charcoal grills. This is one of their earlier designs and one that you just can't go wrong with. The booklet instructs the person doing the grilling (AKA the grillee) to make a pile of charcoal briquets into a pyramid shape. (There are also accessories you can buy from Weber to aid you in this simple task.) The charcoal is piled into the lower portion of the porcelain kettle drum on top of a small wire rack.
Weber recommends NOT using lighter fluid because it can give a chemical taste to the food being grilled. They recommend using crumpled up newspaper under the charcoal to get it started. Once the charcoal briquets are getting going, you wait for approximately 25-30 minutes until they have turned a gray ash color. This means the charcoal is hot and ready for the food. (Also, you might consider using hickory chips or moistened herbs such as rosemary, for additional flavor.)
Our chef (AKA yours truly) usually places the food in the center of the (upper) grate, which is made of a strong triple plated nickel, where the charcoal is the hottest. If you want to keep something warm, just move it to the side of the rack. Steaks, depending on their thickness and how it is to be done (rare, medium or well), take plus or minus 10 minutes to grill. Hot dogs, for example, just take 2-3 minutes. A hamburger will take about 8 minutes. You can also grill chicken, fish and veggies on a Weber. Shish-kabobs are a fun entree to make on a Weber grill too. The onions, peppers, tomatoes all have a great barbecued taste. We have occasionally pre-cooked chicken slightly in an indoor oven and then popped it on a Weber to finish just because chicken generally takes longer to cook. The booklet also gives several recipes and cooking suggestions.
Our Weber booklet suggests using the proper tools to grill your food. They do not recommend using a fork, for example. A fork is too short, could contribute to possible burns and also by poking y our meat, you could lose some of the juices that make it so juicy. The makers of the Weber grill also suggest not opening the lid every couple of minutes. Doing this just makes cooking time longer. Make sure to leave the 4 little aluminum vents in the dome lid open too. Closing the vents is done when cooking is over and you wish to snuff out the charcoal.
Cleaning a Weber doesn't have to be a dirty job. When the charcoal briquets have cooled, usually in 2-3 days, you can safely scoop what is left into a plastic or paper bag and close it up for disposal. A wire brush can be used to clean the rack, but cleaning doesn't need to be done each time you use your Weber at all. Using soap and a soft cloth is an easy way to keep your Weber grill looking shiny and new. The color of our Weber Charcoal Grill is black. An aluminum ash catcher is under the kettle.
*When opening the lid of the Weber during grilling, open at an angle to prevent ash from billowing up onto the food (created by suction). Also, if you do use lighter fluid, never use it when the fire is already going.
*For outdoor use only. Do not use indoors because of toxic fumes.
*Do not use gasoline, alcohol or other combustible fluids to lite charcoal.
*Do not move a hot Weber grill.
*Do not use near any material that could come into contact or catch fire.
*Do not let children or pets near hot grill.
*Do not use water on hot charcoals. Could damage porcelain finish of grill.
*Do not line the bottom of the bowl with aluminum foil in an attempt to catch meat drippings; will obstruct air flow.
*Do use protective mitts or hot pads.
*Do use long handled barbecue tools.
We selected the Weber 18" Silver because is the perfect size for our little patio. We are, to say the least, thrilled with our grill.
