I made the mistake of picking a "character" theme for my daughter's first birthday, assuming that I could have a cute bug-themed birthday for her the following year. How silly of me to not realize that two-year-olds have OPINIONS. Bound and determined not to make the same mistake twice, my daughter and I pored over party supply catalogs until we picked the perfect theme for my son's first birthday: rubber duckies! Of course, the very first thing we did was run out to get the Wilton 3-D Rubber Ducky Pan.
The Pan and How to Use It
The Wilton 3-D Rubber Ducky Pan is a true three-dimensional pan (unlike the Wilton 4-Pc. Sport Ball Set) with the duck design molded into both sides of the pan. The top of the pan has a "rest" to keep the pan from tipping in your oven.
Baking the cake is simple enough: using one box cake mix, coat the pan (I use Baker's Joy or Wilton Cake Release to ensure that the cake comes out of these molded pans. Traditional greasing and flouring tends to result in chunks of cake stuck to the pan for me.), pour the batter into the bottom side, place the top side of the pan on, tie with oven-safe string, and bake.
Cooling the cake has specific instructions as well; you cool the cake on the one side, then flip it to the other side and remove the bottom pan, then one last flip before taking the cake out of the mold. Voila! An adorable rubber ducky with the eyes, beak, and wings should be marked on either side ready for decorating.
My Experience
My first difficulty was the fact that my son has multiple food allergies. As a result, the "duck" portion of his cake had to be wheat free, dairy free, soy free, and egg free. I was a bit concerned about how this pan would work for a cake that has a hard time rising to begin with, and it performed like a champ! The duck might not have been as "chubby" as it might have been with a regular cake, but following the instructions to the letter resulted in a clearly definable duck cake.
The bottom of the cake is flat enough when baked in this pan that you don't need to worry about leveling it, so long as you apply a good amount of frosting to "glue" it to the cake plate. I did have a much easier time frosting the bottom sections of this cake than the ball cake, simply because you can sort of "flatten" the bottom into the cake plate, and don't have to emphasize the "roundness."
Notes
Overall, I had a very easy time using this pan with what could have been a very difficult cake! My only caveats are to make sure to have the oven-proof string to begin with (another case of Wilton not noting this on the outside of the box and me realizing it as I was about to put the cake in the oven), and covering your bottom oven rack with aluminum foil and placing it under the rack you are baking the cake on, in case any of the batter sneaks out the sides of the pan.
I wash all my Wilton pans by hand, and had no trouble cleaning this one, even with the details. One thing to watch out for is the "anti-tip" part on the top pan, because it can bend fairly easily. I store my pan in it's original box to keep it from being bent too much by my other pans.
Again, this is a great pan to pick up at your local craft store with a coupon.
