The Bottom Line: Who says ghosts aren’t cute? This single serve cake mold will make any Halloween event simply spook-tacular.

With Halloween less than 90 days away, Ive started unpacking the decorations, bakeware and assorted oddities Ive collected over the years to see what needs replaced. Some of my favorite seasonal goodies are cookie cutters and single serve baking pans. Wilton has always had a huge selection of both of these but when I went to check the website a few months ago to see if they added any others to the Singles series, I found out that they were discontinued. In the past they stopped selling a few individual patterns but when they yanked the entire Single line I was more than a little miffed. All most all of the designs were nicely detailed, but no so much so that decorating them became a chore. The pans were sturdy, held up to a lot of wear and tear and were inexpensive.
Over the years I accumulated quite a few of them, some basic teddy bears and assorted animals and others that were seasonal like Christmas, Halloween and Easter. Of course the Halloween ones are my absolute favorite and among my priced possessions. In addition to the most popular bat and ghost pans, you could also pick up molds of a cat and a jack-o-lantern. All of these designs were also available in a multi sheet form with six to eight items [all the same design] on each sheet. These allow you to bake small, single serve cakes [hence the name Singles] that can be easily decorated, personalized and make great looking table decorations. These are still being sold at stores like Michaels and retailers that deal with candy making, cake decorating and other related items so dont think youve missed out on all the fun.
Wilton Single Mini Ghost Pan 2105-1121
This small but extremely cute mini pan can be used to create single serve cakes and treats. You can take your finished product and place it on a large sheet cake or use it as a stand alone table decoration. There arent any instructions with these pans but here is how I create them. Using a standard cake or brownie mix, fill the pan about half way and bake on a cookie sheet for about ten minutes at the suggested temperature. I use a cookie sheet with rounded edges so getting the mini pans in and out of the oven is a piece of cake [no pun intended]. Using one of the old school cookie sheets with the rounded edges will help prevent the mini pans from sliding off the sheet and allows you to slide the tray out without the risk of having the pans slide around or having one tip over.
Youll want to make sure that you grease the inside of the pan thoroughly before you pour in the cake or brownie mix. You can use a spray but I prefer to use the more traditional method of oil and flour. Make sure you tap out the excess flour and to give the mold a few taps once you pour in the batter to remove air bubbles. Cleaning the pan is easy, just soak it for a few minutes in warm water and use a sponge scrubber to get into the crevices. Youll want to make sure that this is completely dry before you put it away because it will rust. If you do get some rust build up you dont have to throw it away, you can use these for decorations! Add a few black or orange bows and you can hang it up on a wall or fill it with sand and use it for candles.
Decorating
There are a lot of different ways to decorate your mini ghost. You can use a white cake batter so you wont have to frost the entire cake. All you will need to do is add some detail for the eyes and pipe out some orange frosting around the edges for a little color. Since the cake is small, about four inches high by three inches wide, this shouldnt take very long to decorate. Once the cake has completely cooled you will want to make sure that the bottom of it is as flat as possible. Sometimes the center will bubble a little and when you go to flip the cake over it might wobble or cake the cake to look warped. You can fix this by cutting the bottom so it is even or using a cake leveler if you arent great with a knife.
Other methods of decorating frosting it with a white icing then adding shredded coconut, using a canned frosting then topping with sprinkles or my personal favorite, making gooey ghosts. Using a sharp knife, cut a rectangle in the bottom of the cake once it is completely cooled. Only cut about 3/4 of the way into it, this might take some time to master. Full the hollowed out area with peanut butter, jelly, cream or whatever else strikes your fancy. Take the piece that you removed and trim it to fit the remaining area and press back into place. This is something that youll want to do as close to your party or event as possibly because some items that can be used to fill the cake will leak out or start to seep into the cake. If you really want to go all out you can slice the cake in half horizontally and core out the middle, fill it, piece it back together then frost it.
The Singles Halloween Series
There were four official Singles pans released, these included the Jack-O-Lantern [2105-1120], Ghost [2105-1121], Bat [2105-1122] and Cat [2105-1123]. They had a retail price of about $1.99 and were great for people who didnt want to have to bake one large cake or simply wanted a little variety when baking for Halloween. Sadly, Wilton has discontinued many of the pans in the Singles series but they can still be found at baking specialty stores like Michaels or from online stores that deal with candy making supplies, baking molds and cooking items. There were other Halloween mini pans released before the Singles series debuted, they are essentially the same style, size and theme but didnt carry the Singles label. Older pans included half moons, scarecrows, tombstones and the word trick or treat.
The Bottom Line
I am still a little sore that Wilton decided to stop making these mini pans. They are the perfect size for single serve deserts, bake sales, parties and gifts. Im hoping to make it to several of the local Michaels stores in my area when they start to bust out the Halloween items to see if they have any left over from last year. These have a suggested retail price of about $1.99 but some places may sell them for less to try and get id of any stock they may have on hand. The ones that I own have held up nicely over the past few years and see a lot of use during the month of October. It figures, I find a baking pan that is tops in its class and the manufacturer goes and discontinues it. Bad Wilton!
