Be prepared for some serious neighbor envy with the Weber Smoky Mountain (WSM) 2820. The smells and tastes produced by this smoking machine are wonderful! The WSM is a bit pricey, but well worth the money. The WSM is ready for smoking right out of the box, but there are some modifications that will enhance the performance of the WSM. For instance, you can add a water pan from a Brinkman smoker for a larger capacity, and more stability. I've smoked numerous racks of ribs and pork shoulders on my WSM and the taste is phenomenal. I would say that the quality of smoked meat produced by the WSM rival restaurant BBQ. I seldom order BBQ from restaurants anymore because the meat I can smoke in the WSM is better! The WSM bullet shape allows you to precisely control the smoker's temperature by regulating the air, unlike smokers with open bottom designs. Replacement parts and accessories for the WSM are easy to locate and relatively inexpensive. I look forward to many years of happy smoking with my WSM 2820.
