Between Philippines and Taiwan this is my airline of choice. It's cheaper than Philippine Airlines and around the same price as China Airlines without the military pilots. I've flown with EVA countless times (more than 20). Summary:
1. Schedule
Plane was only late once. Yes it was disappointing, but they handled the incident professionally, explaining the reasons why the plane is delayed and offering us coupons for lunch at the airport restaurant. Profuse apologies from the crew before takeoff and after landing.
2. Crew / Flight attendants
Very professional, courteous and polite. I've never seen one lose his / her temper even when dealing with weird, demanding passengers. A lot of them are good-looking too.
3. Pilots
EVA uses foreign / foreign-trained pilots unlike CAL that uses military-trained pilots who still thinks they're flying an F-16 and not a commercial jumbo airplane.
4. Planes
Nothing fancy but adequately comfortable. You get the same as what other airlines are offering- magazines, newspapers, earphones. The interior feels clean. The seats are a bit cramped though in economy especially on the 747-400. If you have an average built, you can live with it. More than average and I suggest upgrading to Economy deluxe.
5. Food
Unlike some airlines, you get to choose between 2 meals for dinner / lunch. Standard food, again nothing fancy but sufficiently palatable. Never got sick from EVA's food yet. Their cake is delicious.
The only downside with EVA is they don't have video entertainment in economy class for short haul unlike Cathay Pacific. But for short-haul flights, it's nothing serious.
