I took my daughter and husband to Egypt for a family vacation in February 2000 and found Egypt Air to be as good as most any other airline. We were on both short-haul international flights from Europe and internal flights. Granted, there were delays on virtually every flight, and we were never given the real reasons. (Not all of them were Egypt Air's fault. How often does the Pope visit Cairo?)
Planes were comfortable, with good knee clearance. Food was mediocre, but edible.
Be advised, though, that baggage handling on the internal flights to Luxor and Aswan is capricious. You will not get a claim check showing your particular flight -- only one for the destination. If it gets on the plane on time, fine. If not, they put it on the next plane. Flights to these destinations leave every 30-60 minutes from Cairo so, even if you have to wait, it won't be for long. Make sure you get to the airport on time if you want to make sure you bags get there with you.
