I have visited China many times, most recently in the last two summers. Keep checking back to see my recommendations on other places in China and the world. I have visited Hong Kong in both of those two summers and have absolutely loved it! There is almost nothing I don't like and the cons that I did list were the only ones I could come up with.
The transportation in Hong Kong is very good and very safe. It is also inexpensive unlike the hotels. First of all, there is an abundant supply of taxis willing to take you anywhere. For a more historical trip you can use one of the old, original ferries (they are still safe) to get between the island and the mainland. The subway system, as opposed to the one in New York is very clean and rarely have any problems in fact I have never experienced any. Finally you can take a bus between places and if you take a double decker one it is sure to be fun.
When you arrive in Hong Kong it will most likely be through Hong Kong International Airport. Unlike some of the airports in interior China this one is very modern. If you have to wait there for a stopover there are plenty of shops and nice cafes/restaurants to visit. Also, if you are on business there is a place to hook up to the internet.
After arriving at the airport you will make your way to your hotel through the transportation system that I previously mentioned. Personally, I stayed at the Island Shangri-la which was absolutely excellent. The room was a little pricey but that is because of it great location and views. Otherwise you did get your money's worth and the breakfast was very nice offering many varieties of foods. For much more information check my recommendation of the Island Shangri-la.
One of the best parts of Hong Kong is its shopping. It is well known for its designer clothes and accessories and also has an extensive antique market. Though prices for antiques can be higher than in other places you are sure to get genuine porcelain, jade, etc and don't have to worry later. Otherwise prices are low on other things and you will find great deals in side street markets and also at the famous night market.
Finally eating. The food in Hong Kong is good no matter what you are eating. The chinese is excellent and so is the Thai, Indian, etc. For those people with sensitive stomachs there is no need to worry, western foods are served most everywhere and if you have chinese it should probably be cantonese.
When you are in China you can always expect great service from some of the friendliest people in the world.
