My favourite hotel on Kauai without any doubt is the Hyatt Regency on Shipwreck Beach near Poipu. As one of the more upmarket resorts on the island, the Hyatt hotel is designed like a plantation or resort built in the thirties or forties. Not higher than a palm tree, it is very spread out and offers a large variety of restaurants and bars. Service is very friendly and professional.
You will find large free form swimming pools with water slides (don't forget to get an arm tag from the towel counter, next to the poolside snack bar), a large salt water lagoon with a man-made 'beach', hammocks, and of course a prime location on the beach. Although the water on Shipwreck Beach can be a bit rough, spending some time on the beach can be very relaxing. With a bit of luck, you will be joined by monk seals, who use the beach in front of the Hyatt to rest. Just make sure that you don't come to close to them - they need some time off too!
Although the Princeville Hotel in Hanalei is very beautiful as well, the advantage of the Hyatt is its proximity to Lihue, Poipu and Waimea Canyon. Another advantage is the hotel's proximity to a small mall that has some great little restaurants (and some larger ones), just in case you want some variety from the hotel's restaurants (that are actually very good.) Plenty of golf nearby as well.
Also - you must go to the ANARA Spa for a treatment. In addition to massages, facials, body treatments etc, you will find a lap pool, separate men's and women's whirl pools with areas for (nude if you wish) sun bathing, a nice spa restaurant and a great selection of spa products.
