I would certainly try this restaurant and I tend to be more adventurous in trying new dishes. My husband on the other hand is somewhat from the "picky eaters" variety and would probably go with the old standby like a regular burger from the cow . . . .

We have tried some of them, but the ones that we haven't we were actually curious. You see I am very much interested when it comes to trying various foods. I have tried many different items in my days and have a very open policy for at least one try and if I like it more then one.

Thanks file13. I definetly want to see your take on this place. You will not regret it. If the kid from New Orleans is still working there, I highly recommend asking him to serve your table. Trust Me! The guy really knows his stuff.

Thanks Shar. I agree when I tried the alligator meat, I didn't know what to expect, but it was really good. I tried it in New Orleans first, but in Austin there was this place that just made incredibly good. I forgot the name.

Pamela, thanks. I have tried Ostrych, Bear Sausage and Aligator. Aligator was the best in Austin, but I can't remember the name of the restaurant and plus I was in a bit of a hurry that night. I was picking up my wife from the airport. Thanks for this great and interesting comment. Very educational.

I will try to remember some more stuff.

dessert sounds good. I did try Alligator when I was in New Orleans. Did it more to shock our friends but you know...it wasn't bad. Think I'll just skip the different type of meat and stick to dessert.

You let the waiter select the wine? You must have an awesome expense account!

Being a dragon, I am more than passing fond of wild game. If I were visiting Austin, I would certainly give this place a try.

Have you tried emu or ostrich yet? I used to raise emus...the meat is red and beef-like. Bear is also yummy and elk is to die for. I agree about rabbit, great meat and very healthy, low in cholesterol and fat. Alligator is also good, but sometimes chewey and the sauce is important to the total enjoyment of the dish.

Oh, venison is what deer meat is called. In the US, it is usually farm-raised, not really wild, and comes from fallow deer, a European species, not native white tails.

My favorite game bird is mourning dove but quail is a close second, I have a hunting cat who brings them to me as presents.

Great review, do some more on exotic foodstuffs.

Thanks Stract. That is one heck of a story. Thank god I didn't have to kill it, just eat it.

In Hudson's it is pretty good rabbit, but I guess if I saw how they do all that you described, I doubt I would be able to eat it as well.

I've lived in Austin all my life, and the first time I went to Hudson's was this past year, believe it or not. I'll have to agree with you on the quail, I tried some of my grandmother's.....

when I went I think I got some sort of pasta dish, and it was wonderful, but I can't for the life of my remember what it was.

As for rabbit, I will never eat rabbit again. But that's just because of the experience I had in Combat Survival Training a few summers ago here at USAFA. We had to "thump it and muck it down." Yeah, given live rabbits, killing them, skinning them, and then boiling them....tasted horrible! I actually thought the best part of the rabbit was the organs (kidneys, liver, lungs...).

Anyhow, great review.

Being a carnivore, I have to say Venison Sausage is good stuff!
I don't steer away from Bambi, but I do steer away from Thumper. Probably just because I haven't ever seen Hassenfeffer on any menus.

Excellent job, and this would have been very difficult to do since the food was so unusual. I am so glad that you didn't say "tastes like chicken". We have game dinners quite often and I haven't had anything that tastes like chicken.
Again great job with this very difficult review.

I'm right there with Tiffany on this one! The foods you mentioned would definitely never be on my plate--but your review told all the details on a restaraunt that I like to learn. Good job.
