It's true that nothing, I mean nothing sticks to this mat. But all my cookies come out completely flat on this thing. No matter what I do! I've experimented many times! The same batch of cookie dough, cooked on 1. silpat on plain cookie sheet, 2. silpat on insulated cookie sheet, and 3. plain cookie sheet no silpat, will yield different results, with the silpat versions being the flattest of all. The plain cookie sheet comes out PERFECTLY, the insulated sheet slightly less perfect, but the worst is the silpat or silpat on insulated sheet. Yuck! Kids laugh at these flattened cookies.
I'm sure if I was a candy maker, my silpat would be indispensable! It's also useful when working with things you don't want to have stick to any surface.
It seems durable to me, though I wash by hand and keep stored with my cookie sheets, flat. I have had no problems with smoking or falling apart, as I read in other reviews, but I've never cooked above 350 with it. I think the instructions give a maximum temp, but I've lost the original box so I'm not sure. 350 seems to be fine.
Pros: Easy to use, easy to clean, inexpensive. Cons: Occasionally stays out all night and never calls its mother.
This is a great product. Nothing sticks to this mat. Everything bakes evenly with even crispness. It does present a minor storage problem because it can't be folded or creased, but I just loosely roll it and put it in a drawer. I didn't find it expensive, you can get them at BB&B for about $19.95 and considering how long they last and you don't have to worry about tearing it to the correct size of your pan like parchment paper (which I find very expensive and a hassle), this is a great value.

I bought one of these mats after hearing that it promotes even baking, prevents burning,is non-stick, and makes perfect cookies. I used the silpat for a batch of typical home-made chocolate-chip cookies.To my surprise, the cookies were flattened out during cooking, with the chips sticking out. I cooked the next dozen on a regular sheet, and they were normal, about half the diameter of the flattened cookies and 3x thicker. I rotated cooking on silpat and the regular sheet, but results were the same- flat on silpat, normal on cookie sheet.
A cookie scoop was used on all cookies, so the size was very uniform, and the dough was from the same batch.
The cooking time(8 minutes) was exactly the same, as was the oven temperature. I did try to shorten cooking time on the last batch, but as the flattening happened in the first 5 minutes, they were softer, but still too flat.
Not using these on cookies again.
