the reason why i chose the global boning knife is because it is flexible. this gives it the characteristic of being a fillet knife as well. the blade is extremely thin and i found it to be a bit sharper than the other global knives i have based on a factory edge. it's not as quite as well balanced as some of the other global knives out there either. the weight is a bit on the handle side. however, i think that global designed it as such for safety reasons. if one were to use the knife to trim meat off bones or to fillet a fish, one would need to feel as if ones hands were holding nothing in order to make use of his/her dexterity. so most of the weight is in your grip. overall, the knife is very good. it is very sharp and a flexible blade is a plus.
