Pros: Sharpest blade, comfortable handle for right handers, nice looking with wide Damascus pattern.

I thought I loved my chef's knife...

Pros: Perfectly balanced, very sharp, easy to control. Best knife I own.
Cons: Some may think it pricey, but not considering how wonderful it is.
I bought the Shun Santoku because of all the raves in Cook's Illustrated and from people on the Good Eats discussion group. It's everything everyone said.

Very sharp, thin but not floppy, and absolutely perfectly balanced. The cutting edge is curved just the right amount to allow proper rocking as you cut. It feels like an extension of my hand.

I used to love my Henckels chef's knife -- still do -- but this is now the knife I pick up when I go into the kitchen.

And on top of that, it is gorgeous.

Pros: Easy to handle and clean. Beautiful, the finest quality steel, very sharp.
Cons: I don't have anything bad to say! It outshines every other nice knife I own.
I thought I couldn't get a better knife than the Shun 8 inch chef's knife until I bought this Santoku. It is the perfect weight, extremely sharp, and very easy to clean. It cuts right through a frozen pork chop, no problem. It also makes chopping onions and other veggies hassle-free and less time consuming. And I would be remiss not to mention how aesthetically beautiful the knife is.
