I live in NYC, which is the best place in the world - for culture, for food, for drama, for people, for art.
I have been reading a lot of reviews that complain (justifiably) about the service received at a certain restaurant. As a card-carrying member of the eat-out-all-the-time class, I have some advice for everyone who'll listen:
NO RESTAURANT HAS THE RIGHT TO END YOUR MEAL FOR YOU. Only you have that right. When you're done with the sprig of parsley, the pat of butter, the crumb of whatever - that's when the waiter should take your plate. You set the pace of your meal. If you're eating a sampling menu/tasting menu, signal to the waiter that you are ready for the next course. If the waiter jumps the gun a bit, tell him that you are not done with what you are eating. Let the kitchen figure out how to improve their timing; it's not YOUR responsibility.
I refuse to pay even $5 for a sandwich, if the service doesn't cater to MY needs. I have returned hamburgers at McDonald's, because they failed to remove the onions or forgot to give me extra mayonnaise. If we, as consumers, do not DEMAND better service, we'll never get it.
